Millet-Buckwheat Vegetable Pan with Tofu and Edamame

Ingredients

- 100 g Millet
- 100 g Buckwheat
- 200 g Tofu
- 1 tsp Ground meat seasoning
- 1 Onion
- 1 Zucchini
- 100 g Edamame
- 2 Spring onions
- 2 Tomatoes
- 1 tbsp Sesame or pumpkin seeds
Instructions
- Cook millet and buckwheat according to package instructions. Set aside.
- Cut tofu and zucchini into small cubes. Season with ground meat seasoning or a seasoning mix of your choice.
- Finely chop onion and fry with tofu and zucchini.
- Fry over medium heat for about 5 minutes.
- Add edamame/peas, diced tomatoes, and sliced spring onions. Briefly fry everything until the vegetables are crisp-tender.
- Prepare the Tahini Sauce
- Bring everything together:
- Add cooked millet and buckwheat to the pan and mix well. Taste and adjust seasoning if needed. Then distribute the sauce over it.
- Serving:
- Top the finished pan with sesame or chopped nuts.
