Millet-Buckwheat Vegetable Pan with Tofu and Edamame

Ingredients

  • 100 g Millet
  • 100 g Buckwheat
  • 200 g Tofu
  • 1 tsp Ground meat seasoning
  • 1 Onion
  • 1 Zucchini
  • 100 g Edamame
  • 2 Spring onions
  • 2 Tomatoes
  • 1 tbsp Sesame or pumpkin seeds

Instructions

  • Cook millet and buckwheat according to package instructions. Set aside.
  • Cut tofu and zucchini into small cubes. Season with ground meat seasoning or a seasoning mix of your choice.
  • Finely chop onion and fry with tofu and zucchini.
  • Fry over medium heat for about 5 minutes.
  • Add edamame/peas, diced tomatoes, and sliced spring onions. Briefly fry everything until the vegetables are crisp-tender.
  • Prepare the Tahini Sauce
  • Bring everything together:
    • Add cooked millet and buckwheat to the pan and mix well. Taste and adjust seasoning if needed. Then distribute the sauce over it.
  • Serving:
    • Top the finished pan with sesame or chopped nuts.
